Why do we get brainfreeze when he eat/drink something cold too fast?

Simply put, Brainfreeze occurs when the Slurpee (or anything cold) touches the roof of your mouth, the collection of nerves in the roof of your mouth (called the spheno-palantine ganglion) go into a spasm (a spasm is like a cramp).
